Autumnal turnip pan with apples and bacon

Servings: For 4 people

Ingredients:

  • 500 g swedes
  • 200 g bacon cubes
  • 2 medium-sized apples (preferably sour variety)
  • 1 large onion
  • 2 cloves of garlic
  • 4 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • Some fresh parsley for garnishing

Directions:

  1. Preparing the turnips:
    • Peel the turnips and cut them into cubes about 1 cm in size.
  2. Fry bacon:
    • Heat a large pan and add the bacon cubes. Fry them over medium heat until crispy.
  3. Add onion and garlic:
    • While the bacon is cooking, peel and finely chop the onion and garlic. Add the onion and garlic to the pan with the bacon and sauté until the onion is translucent.
  4. Add turnips:
    • Add the turnip cubes to the pan and fry everything together for about 10 minutes, until the turnips are lightly browned and almost soft.
  5. Prepare and add apples:
    • While the turnips are cooking, wash the apples, remove the cores, and dice them. Add the apple cubes to the pan and mix well.
  6. Seasoning:
    • Season the pan with salt, pepper, and thyme. Stir well and let everything cook for another 5 minutes, until the apples are warm and slightly softened, but still have a bite.
  7. Serving:
    • Remove the pan from the heat and season to taste. Sprinkle freshly chopped parsley over the finished dish.
  8. Serve:
    • Divide the autumnal turnip pan evenly among four plates and serve warm.
