Preparation time: approx. 20 minutes
Ingredients:
- 2 packs of halloumi (approx. 200-250 g each)
- 2 zucchini
- 2 bell peppers (red or yellow)
- 1 small red onion
- 2–3 tablespoons olive oil
- Wooden skewers (approx. 8 pieces, soak in water beforehand)
For the herb oil:
- 3 tablespoons olive oil
- 1 tbsp lemon juice
- 1 clove of garlic, finely chopped
- Fresh herbs (e.g. rosemary, thyme, oregano or parsley)
- Salt and pepper to taste
Preparation:

Prepare vegetables and cheese:
Cut the zucchini into thick slices, dice the bell pepper, and slice the onion into wedges. Cut the halloumi into pieces approximately 2 cm in size. -
Stick in skewers:
Alternately place halloumi and vegetables onto the wooden skewers. -
Mix the herb oil:
Mix olive oil with lemon juice, garlic, and finely chopped herbs. Season with salt and pepper. -
Barbecues:
Brush the skewers with a little herb oil and grill them on the grill for about 8-10 minutes, turning them all around, until the halloumi is golden brown and the vegetables are lightly roasted. -
Serve:
Drizzle with the remaining herb oil; this goes well with: baguette, herb quark or a fresh garden salad.
Tip:
If available, use fresh herbs from your own raised bed or balcony planter – this not only tastes better, but also makes the dish truly personal.
