Ingredients:
- 2 leek sticks
- 2 cloves of garlic
- 2 tablespoons olive oil
- 2 tablespoons freshly grated Parmesan cheese
- Salt and pepper to taste
Preparation:
- Wash the leeks thoroughly to ensure all the soil is removed. Then slice the leeks into thin rings, using both the white and green ends. The green leaves may be a bit tougher, but they're still delicious.
- Peel the garlic cloves and chop finely.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the chopped garlic and sauté for about 1 minute, until fragrant.
- Add the sliced leek rings to the pan and stir well to coat them with the garlic oil. Reduce the heat to medium-low and sauté the leeks for about 5-7 minutes, stirring occasionally until the leeks are soft and lightly golden brown.
- Sprinkle the freshly grated Parmesan cheese over the roasted leeks and stir gently until the cheese is melted and coated. This should only take about 1-2 minutes.
- Season the fried leek with salt and pepper to taste.
- Serve the roasted leeks immediately while they are still warm and delicious.
